Baking Day

Today was a snow day.

The perfect sort of day for baking.

What better way to use my time on a day when it is advisable not to go outside, than to spend it all in a cozy kitchen by the oven?

Except, we were out of chocolate chips.

And yes, it was important enough for me to get dressed, pull out my little car into the trenches of the unplowed roads, and brave the conditions that had caused schools to be closed all around our county.

Yes, it was worth making my way down the one lane street (the other half being completely filled with snow), gracefully avoiding the poor delivery boy trudging along with his newspapers, and the men trying to shovel their car out of the middle of the road.

It was totally worth it.

The Chocolate Orange

Have you ever tried a chocolate orange? They sell them around Christmas time; a little round ball of chocolate that breaks apart into slices that look just like an orange. Except for the fact that they're brown. Maybe like the Cleveland Browns' helmets are orange...

Maybe.

Despite the fact that orange slices are not normally brown (or chocolatey for that matter), one should not be afraid to try it. The flavors together are delicious!

Making Your Own Chocolate Orange

Put these ingredients together, and you will have your very own chocolate orange. Although, it probably shouldn't look like an orange. In fact, I'm pretty sure it should look like a muffin. I'd be a bit worried if it didn't.

Making Your Muffins

Scrape as much of the batter into the muffin tins as possible. Raw muffin batter is not as good as raw cookie dough (although I will still lick the spoon), so you want as much of it baked into fluffy deliciousness as possible. But again, there's nothing wrong with licking out the bowl.

Ingredients

  • 1 egg
  • 3/4 cup milk
  • 1 T orange juice
  • 1/2 cup vegetable oil
  • 2 cups all purpose flour
  • 1/3 cup sugar
  • 2 T cocoa powder
  • 1 T baking powder
  • 1 tsp salt
  • 1/4 tsp cinnamon (optional)
  • 1/2 cup chocolate chips

Cook Time

Prep time: 10 min
Cook time: 20 min
Ready in: 30 min
Yields: 12 chocolatey muffins

Instructions

  1. Preheat oven to 400 F. Lightly grease a 12 cup muffin tin.
  2. Beat egg until fluffy.
  3. Mix in milk, orange juice, and oil.
  4. Add in the rest of the ingredients, stirring until combined. I also threw in 1/4 tsp cinnamon here, just for fun, but you couldn't really taste it.
  5. Bake in the oven for 18-20 minutes, until a toothpick inserted in the center comes out clean.
  6. Let them cool for a minute or two, then remove from muffin tin to finish cooling. I run a knife around the edge of the muffins to get them out.

The Orange Glaze

Mix 1/2 cup powdered sugar with 2 1/2 to 3 teaspoons of orange juice. Dip the muffins in the glaze. If you need more, just mix powdered sugar and orange juice to a consistency that you like.
